The olive oils of Provence PDO/Organic are part of the heritage of our region. It takes between 5 and 7 kilograms of olive to produce one liter of virgin olive oil, that is extracted by mechanical processes only. An olive tree can produce an average of 3 to 5 liters of olive oil a year.
PDO Baux de Provence olive oil is produced near Baux-de-Provence and Alpilles, in the north of the Bouches-du-Rhône department. The main varieties are salonenque, beruguette, grossane, verdale. Two main varieties are obligatorily present. Nice PDO Olive Oil, pure fruit juice, is obtained only from olives of the variety Cailletier. In addition, Nice Olive Oil is a virgin olive oil, type “mature fruit”.
