Place a banon cheese in the bottom of a jar, put on a bay leaf, a little savory Provence, thyme of Provence, pepper, pink berries and seeds of fennel. Repeat until all the ingredients are gone, filling the cheeses well. Pour the olive oil PDO Baux de Provence gradually, making sure that it goes in all the interstices.
The cheeses must be completely immersed without empty space. Close the jar, which must be filled to the brim. Refrigerate for 15 days before eating.
