If the Lyonnais have the bugnes, the Provençaux, them, have the headsets.

Fine and crispy donuts powdered with icing sugar or crystal sugar. They are tasted for mid-Lent, for Carnival … and as soon as you want to party.

For 6 persons :

250 g flour, 50 g sugar, 1 pinch of salt, 2 egg yolks organic, 40 g butter, 1 tsp. orange blossom, frying oil, icing sugar or crystal sugar.

Mix the flour with the sugar and salt. Dig a well, add the egg yolks, melted butter and orange blossom water. Knead and add little by little 5 cl of water in net, until obtaining a smooth paste. Roll the dough into a ball, wrap it in cling film and leave to rest for 2 hours.

Cut the dough into 12 equal pieces. Spread them on a floured work surface and then pass them to the mill to obtain strips of a thickness of 2 to 3 mm. You can also use the rolling pin, but the work will be more difficult!

Using a rolling pin, cut strips 3 cm wide and 15 cm long. Heat the oil for frying and immerse 2 to 3 earplugs in the oil bath. Brown 1 mn on each side: be careful, they burn very quickly! Place them on paper towels and cook the rest of the ear cups. Sprinkle with icing sugar or crystal sugar.
